A very strong hot sauce where a few drops goes a long way. Despite being spicy, the main benefit to Koregusu is to add other subtle and complex notes to Okinawa Soba. Pairs very well with other Asian soup dishes like ramen, nabe, etc. Package is enough for 2 to 5 servings. Stores very well in a cool place. If you are up for the challenge.
Full disclosure: Traditionally made with Shima Togarashi (島唐辛子) or Okinawan chili peppers and Awamori (泡盛) or Okinawan rice liquor that contains between 20% to 40% alcohol content. Unfortunately, those ingredients are not readily available in this part of the world so I make it which Thai chili peppers and vodka. The flavour is remarkably similar to the original. Aged for at least a month.
