Soup is a light pork broth infused to bonito flakes and other umami rich ingredients. Flavoured with a blend of Okinawan, Himalayan and sea salt as well as organic soy sauce. Ribs slow cooked for over 18 hours in a light but rich braising liquid flavoured with soy sauce, Okinawa black sugar and Taiwanese golden sugar. The black and golden sugars avoid the heaviness molasses flavour typical found in brown sugar.
