Okinawa Soba is a regional variant of ramen from Okinawa. It is something in between ramen and udon orsoba. Despite being called soba, it uses ramen noodles. Tare, or sauce, and flavoured fats are not added to the soup, unlike ramen. Instead, Okinawa Soba is a delicate blend of pork and seafood dashi lightly flavoured with salt and soy sauce. There is far less fat than ramen making it a (relatively) guilt free alternative to ramen. You can drink all the soup without feeling greasy afterwards.
